Harvest Kale and Quinoa Salad

Ingredients:

2 cups kale, chopped, 1 cup cooked quinoa, 1/2 cup pomegranate seeds, 1 apple, diced, 1/4 cup pumpkin seeds, 1/4 cup Greek yogurt, 1 tbsp honey, 1 tbsp apple cider vinegar, Salt and pepper

Instructions:

  1. Massage the Kale: In a bowl, combine kale, olive oil, salt, and lemon juice. Massage until tender.
  2. Prepare the Dressing: Mix Greek yogurt, honey, apple cider vinegar, salt, and pepper in a small bowl.
  3. Combine Ingredients: In a large bowl, mix kale, quinoa, pomegranate seeds, apple, and pumpkin seeds.
  4. Dress the Salad: Drizzle with dressing and toss to combine.
